Healthy Cooking on the Truck

In late 2020 I got very serious about my health. I was overweight and dealing with a lot of issues from fatigue to every joint in my body aching. It was the pandemic, people were scared. With chaos and uncertainty, it seemed like the perfect time to get serious about my health and get my life back!

I started by having my lab work completed. Results from blood work eased my mind that all that was wrong could be managed by diet, supplements, and incorporating exercise.

If you’re a driver, you’ve probably seen posts in your feeds of foods being cooked on the truck. Many solo drivers have set their truck up as a mini studio apartment and park their truck for the mandatory 10 hour rest break. The rest of us are teams. Our trucks do not shut down daily for 10 hours.

Teams have a different set of issues to overcome. The main one is SPACE! Two people in a truck means 2 sets of everything. Organization is key! We don’t have the space to carry multiple cooking appliances and all the utensils that go with them.

Most of us have an inverter, a refrigerator and a microwave as the standard conveniences. Let’s face it, using a microwave to cook sounds gross! Until…

Several years ago, my friend Beth, turned me on to the MicroPro Grill from Tupperware. This isn’t your mother’s Tupperware! The MicroPro Grill is small yet mighty. Perfect for indoor grilling, quick baking, and casserole making. It turns into a frypan, an oven and a grill. Use this in the microwave to grill meats, fish, veggies and sandwiches, AND you can bake cakes in your microwave in under 20 minutes. I have a friend, Allison, that makes full meals in this almost daily when they are team trucking. It takes up very little room and the best part, EASY TO CLEAN. Some of you know that cooking is NOT my favorite thing to do. Since I’ve gotten the MicroPro Grill, I find cooking is a whole lot easier and makes me look good too!
